BREAST OF CHICKEN Almondine

2 tablespoons butter

1 clove garlic, finely chopped

1 / 2 teaspoon salt

1 tablespoon cornstarch

1 / 4 cup toasted almond slivers

4 skinless, bonelessChicken breast

1 package (8 ounces) sliced ​​fresh mushrooms

1 can (10 ounces) condensed chicken broth

1 / 2 teaspoon pepper

Parsley for garnish, if desired

Start preparing for about 40 minutes before serving.

Melt in a skillet over medium heat butter and brown chicken breasts, garlic, mushrooms and sliced ​​almonds, stirring occasionally, until golden brown. With salt, pepper and chicken broth. Lemon Light Chicken and Rice and Mandarin Waldorf Salad in 30 Minutes With Orange Julius Style Drink

Treat your family and/or friends to a special meal that is very quick and easy to prepare. This 30 minute meal is easy and will not look like a quick meal; have everyone wondering how you found the time to prepare this delicious meal. The Lemon Chicken with Rice also has vegetables and the Mandarin Orange Waldorf Salad adds fruit and continues the citrus theme. A quick and complete meal in a matter of minutes. And the clean-up is minimal. For a special treat, serve up an Orange Julius-style drink either as a non-alcoholic before dinner drink or as an after dinner treat.

LEMON LIGHT CHICKEN AND Rice

1 to 1 1/2 lbs skinless whole chicken breasts
1 tbsp oil
1 small onion, diced
3/4 cup regular long grain rice
1 1/4 cup water
1 tbsp lemon juice
1 chicken bouillon cube
1 small zucchini, sliced
1 small red pepper, sliced

Sprinkle chicken some salt. Lightly brown chicken in hot oil; remove. Add onion and rice; cook 8 minutes, stirring frequently. Add water, lemon juice and bouillon; heat to boiling. Return chicken, cover and simmer 6 minutes. Stir in the zucchini and red pepper. Simmer for another 5 minutes or until the chicken and veggies are tender.

MANDARIN WALDORF SALAD

2 cups chopped apples
1 1/2 cups miniature marshmallows
1 can (8-oz) mandarin oranges, drained
1 cup diced celery
1 tbsp honey
mayonnaise to moisten

Combine the apples, marshmallows, oranges, celery, honey, and enough mayonnaise to moisten. Toss lightly. Serve on a bed of lettuce.

ORANGE-JULIUS-STYLE DRINK

1 can (6-oz) frozen orange juice concentrate
1 cup milk
1 cup water
1/2 cup sugar
1 tsp vanilla extract
5 to 6 large ice cubes

Put all ingredients into a blender container. Blend approximately 30 seconds or so to a frozen drink consistency.

Yield: 6 cups

Chicken and Rice Recipes

Not only am I going to provide you with delicious chicken and Rice recipes on this site, but I am also willing to share one of my top sources with you! In the coming weeks we will be providing several other chicken and Rice recipes. Our goal is to keep them simple and easy to make but not sacrifice good taste. Do not hesitate to share it with your friends and family. First, let's look at a really good chicken and Rice recipe:

Curried chicken and rice

Ingredients:

3 Tbsp. butter

2 1/2 tsp. salt

3 cups hot water

3 or more cups diced cooked chicken

3/4 cup chopped celery

1/2 cup chopped parsley

1 - cup raisins

1/4-1/2 cups light cream

Curry powder to taste (color should be dark gold)

2 cups converted rice

1 1/2 bay leaf

1 tsp. minced fresh ginger

1 1/4 cups cooked peas

1/2 cup sliced scallions

1 cup chopped green pepper

2 1/2 cups mayonnaise

Preparation:

Melt butter in a heavy bottomed saucepan. Add rice, salt, ginger and bay leaf. Cook rice mixture over highest flame stirring constantly until it is very hot to the touch. Add hot water, bring to a boil, cover tightly, lower heat and simmer exactly 20 minutes. Spread cooked rice in a shallow dish and cool. Combine mayonnaise, cream and curry powder (lots); beat until blended. Pour over rice mixture and mix very well. Chill. Serves 12-15

Dog Treat Recipe - Just Chicken

Serves: 5

Preparation Time: 10 minutes

Cooking Time: 15 minutes

Fun Fact:

The boxer is named from his style of fightin. Instead of raising his hair or bearing his teeth, the boxer holds his two front paws up.... just like a boxer.

Ingredients:

2 chicken breasts, cooked thoroughly
250 ml (1 cup) Rice, steamed or boiled
150 ml (1/2 cup) cornmeal
250 ml (1 cup) shredded carrots
120 ml (1/2 cup) chicken broth

Preparation & Cooking:

Start by shredding the chicken.
Grab a large pan, add the shredded chicken and then saute it.
Now mix in the cornmeal and chicken broth until it is really well mixed in.
Grab your Rice and carrots and mix them in too. Keep stirring is because you don't want it to get burnt.
Let it simmer for about 15 minutes.
Take it off the heat and it is now ready to be eaten. Make sure you let it cool first and any extra's that are left over can be put in a container and stored in the freezer or fridge.

Dog Tip:

If your buddy has dental or mouth problems, try pureeing pre-packaged grilled chicken in a food processor, then add the cooked ingredients. The result should be a soupier version with all the nutrition of the original recipe.

Best Chicken and Rice Recipes - Chicken and Salsa Verde Rice

This dish is perfect for a special dinner meal where you want to impress. It's healthy, with a Mediterranean twist.

You'll need 4 boneless, skinless chicken breasts, 1 box of chicken flavored Rice, 1 tablespoon of olive oil, 1 1/2 tablespoons minced shallots, 1/2 cup thinly sliced sun dried tomatoes, 1/2 cup slivered toasted almonds, 1/2 cup freshly grated Parmesan cheese, 1/2 cup prepared basil pesto sauce, black pepper and garlic salt to taste.

Cut up the boneless chicken breasts into strips. Season the strips of chicken with the garlic salt and black pepper. Set aside.

Cook Rice according to package directions.

Meanwhile, in a heavy skillet, heat up the oil over medium high heat. Saute the chicken strips until a golden brown color and juices run clear. Put cooked chicken into a casserole dish and keep warm.

Add the minced shallots to the pan and sauté until softened. Add in the sun dried tomatoes and the almonds. Put chicken back into skillet and add in cooked Rice. Stir in the parmesan cheese and pesto sauce.

Makes 4 servings.

Bonus Recipe: Easy Salsa Gazpacho

To make this dish you'll need: 2 large cucumbers - peeled and seeded, 1 jar of salsa - divide in two, defatted low sodium chicken broth, low sodium vegetable juice cocktail, crumbled feta cheese, fresh chopped tomato and fresh basil leaves.

Chop up 2 large cucumbers into small pieces.

Put half of the cucumbers, 1/2 jar of salsa, 1 cup of chicken broth and 1/2 cup vegetable juice cocktail into a blender or food processor. Blend until smooth.

In a medium size bowl, combine remaining cucumber and 1/2 jar salsa; stir this into the blended mixture. Cover and refrigerate for up to 24 hours before serving.

Ladle soup into 6 individual bowls and top off each with crumbled feta cheese. Garnish with fresh tomato and basil.
